Crispy Air Fried Potatoes
Ingredients
500g baby potatoes
100ml chicken stock
1 tablespoon butter
20g chopped parsley
Salt and pepper to taste
Method
- Parboil the potatoes in chicken stock, then allow to cool,
- Transfer to air fryer for 25 minutes,
- Toss with butter and parsley, add heat if necessary to melt the butter,
- Season with salt and pepper.
Warm Dukkah Tomatoes
Ingredients
1 punnet cherry tomatoes
Teaspoon olive oil
Teaspoon dukkah
Squeeze lemon juice
Pinch of salt flakes
Method
- Pierce each tomato to help it blister,
- Gently heat the tomatoes and oil in a drying pan on a low heat,
- Stir in the dukkah then heat through until warm,
- Finish with lemon juice and salt flakes.
Soy Ribboned Cucumbers
Ingredients
1/4 cucumber
50ml soy
50ml rice vinegar
Teaspoon chilli flakes
Juice of half a lime
Teaspoon sugar
Chopsticks for ribboning
Method
- Place the cucumber lengthways and place a chopstick either side. With one hand steady the cucumber and chopsticks, then slice diagonally into the cucumber with a knife to create fine lines (the chopsticks will prevent the knife from going all the way through),
- Flip the cucumber, then finely slice into it horizontally,
- Once you pick it up it will have a nice accordion effect.
